Foil Baked Tilapia
(Prep Time: 40 minutes. Serves 6)
1 lb. tilapia fillets (any firm, mild-flavored fish will work)
nonstick cooking spray
1½ teaspoons lemon juice
½ cup onion, minced
½ cup celery, minced
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive or vegetable oil
Preheat the oven to 400°F.
Cut the fish into serving pieces. Cut pieces of foil, one for each serving piece of fish. The foil should be about 12 inches square. Spray the centers of the foil with cooking spray. Place the fish in the center of the foil, and sprinkle with lemon juice, onion, celery, salt and pepper. Sprinkle 1 tablespoon oil over all.
Life the sides of the foil and fold across the top of the fish, pinching to seal tightly. Seal the ends the same way. Place the foil packets on a baking sheet; bake for 25 minutes.
To serve, lift each packet onto a plate, unwrap, and transfer the fish to the plate with the sauce.
