Broiled Cod
(Serves 4)
1 lb. cod fillets, or other firm-fleshed fish
1 teaspoon butter or margarine, melted
1 tablespoon lemon juice
1 teaspoon dried tarragon, crushed
¼ teaspoon salt
1/8 teaspoon black pepper
1 tablespoon sesame seeds
Preheat the broiler. Line the broiler pan with aluminum foil.
Arrange the fillets in a single layer on the broiler pan. Brush with melted butter.
Mix together the lemon juice, tarragon, salt and pepper. Brush over the fillets, then sprinkle with the sesame seeds. Broil until fillets flake easily with a fork, about 10-12 minutes.
