Marinated Shrimp
This makes a terrific appetizer, but can be used for a light meal with the addition of a green salad.
1 lb. shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon Dijon mustard
2 tablespoons lemon juice
1 clove garlic, coarsely chopped
1 tablespoon prepared horseradish
dash of hot pepper sauce, or to taste
2 tablespoons green onions, finely chopped
2 tablespoons fresh parsley, finely chopped
pepper to taste
Add the mustard to a nonmetallic mixing bowl. Gradually whisk in the olive oil until a thick emulsion is formed, then slowly whisk in the lemon juice. Add the garlic, pepper sauce, onions and parsley. Gently fold in the shrimp and season with the pepper. Turn the mixture into a nonmetallic serving dish and chill for at least 2 hours before serving.
If served over a bed of romaine lettuce, add about 20 calories, 1.8 grams protein, and 2.7 grams carbs. If serving with a 1-ounce slice of French bread, add an additional 77 calories, 0.9 grams fat, 2.5 grams protein, 14.7 grams carbs, and 173 milligrams sodium.
