Lemon Basil Fish
(Serves 4)
4 firm fish fillets (tilapia, cod, catfish, bass or other)
1 tablespoon flour
2 tablespoons cooking oil
1 tablespoon lemon juice
1 tablespoon butter or margarine, melted
1 teaspoon dried parsley
1 tablespoon dried basil
salt and black pepper to taste
1 lemon, peeled and sliced (optional garnish)
Season the fish fillets with salt and pepper, then dredge them lightly in flour. In a skillet, heat the cooking oil and pan-fry the fillets until cooked.
In a bowl, mix lemon juice and butter. On a serving plate, arrange some of the lemon butter sauce on the center. Arrange the fillets on the sauce. Sprinkle basil and parsley on the fish. Garnish with lemon slices and serve.
