Grilled Salmon with Lime Butter
If it's too cold for grilling outdoors, broil the salmon instead. The cooking time is about the same either way.
(Serves 8)
½ cup butter or margarine
juice of 3 limes
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
8 salmon steaks, 1" thick
lime slices (garnish)
thyme sprigs (garnish)
In a saucepan, melt the butter. Stir in the lime juice and thyme leaves and mix well.
Over a very hot grill, grill the salmon for 5 minutes, basting occasionally with the lime butter. Turn the salmon over, bast again, and grill for an additional 5 minutes.
Garnish the steaks with lime slices and thyme sprigs and serve.
