Shrimp Creole
(Serves 4)
¾ lb. medium shrimp, shelled and deveined
½ cup onion, chopped
2 tablespoons butter or margarine
1 can (16-oz.) stewed tomatoes, no salt added
1 cup water
1 (10-oz.) package cut green beans
1 teaspoon Worcestershire sauce
¼ teaspoon salt
½ teaspoon basil
1/8 teaspoon cayenne pepper
1½ cups converted rice
In a large skillet, melt the butter. Add the shrimp and onion and sauté 1-2 minutes. Add the tomatoes, water, green beans, Worcestershire and seasonings. Bring to a boil.
Stir in the rice, cover, and remove from heat. Let stand 5 minutes, fluff with a fork, and serve.
