Beef Steaks Lyonnaise
Here's another "quickie" that can be served in about 30 minutes...This is really terrific with the filets, but any good cut of steak can be used.
(Serves 4)
2 medium onions, sliced
2 tablespoons reduced fat margarine or butter
½ cup canned peeled tomatoes, coarsely chopped (no salt added)
¼ cup steak sauce (Lea & Perrins® or A1®, etc.), divided use
2 tablespoons red wine vinegar
¼ cup parsley, chopped
4 (4-6 oz.) filets mignon (at least 1 inch thick)
In a medium saucepan, over medium-high heat, sauté the onions in melted margarine until tender. Add the tomatoes, steak sauce and the vinegar; heat to boil. Reduce heat and simmer for about 5 minutes. Remove the pan from heat, and stir in the parsley. Set aside.
Grill or broil the steaks for about 5 minutes on each side, or until desired doneness. Serve the steaks with the sauce, garnished as desired.
