Beef & Rice Florentine
(Serves 4)
¾ lb. ground beef (or meatless substitute)
1 tablespoon oil
1 tablespoon finely chopped onion
1 (10-oz.) package frozen spinach, thawed and drained
1 cup water
1 tomato (medium), diced
½ teaspoon salt, or to taste
1 teaspoon oregano
1½ cups converted rice
1 tablespoon grated Parmesan cheese
Leave the ground beef in one piece and flatten into a rectangle. Heat the oil in a skillet and place the whole block of ground beef in the skillet. Brown the meat well on both sides, then break it into large pieces.
Add the onion to the skillet and sauté 1 to 2 minutes. Push the meat to the outer sides of the skillet. Add the spinach, water, tomato, salt and oregano. Break the spinach up and bring the mixture to a boil.
Stir in the rice, cover, remove from heat and let stand 5 minutes. Sprinkle with cheese and serve.
