Cajun Beef
(Prep Time: About 30 minutes. Serves 4)
1 lb. lean top round steak, cubed
1 medium onion, chopped (about ½ cup)
½ medium green bell pepper, seeded and chopped (¼ - ½ cup)
½ cup mushrooms, sliced
1 (14½ oz.) can stewed tomatoes (no salt added), cut up
1/8 teaspoon black pepper (or to taste)
¼ teaspoon cayenne pepper (or to taste)
1 (8 oz.) can tomato sauce (low sodium)
1 - 2 cloves garlic, minced
1 tablespoon hot pepper sauce
½ teaspoon thyme
Sauté the meat, onion, bell pepper and mushrooms in a skillet prepared with nonstick cooking spray, until the meat is browned and the vegetables tender. Add the tomatoes, spices and sauce, bring to a boil, the reduce the heat and simmer for about 10 minutes.
Serve over cooked rice with lemon wedges and thyme sprigs as garnish.
