Two-step Beef Goulash
This is quick to put together, but still requires more than an hour of cooking time.
(Serves 4)
1 lb. beef stew meat, cubed
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
1 envelope onion soup mix
1 can (14½-oz.) whole peeled tomatoes, undrained and chopped
1¼ cups water
1 medium green bell pepper, seeded and diced
1½ teaspoons paprika
2 cloves garlic, minced
1 (4-oz.) can mushrooms, drained (OPTIONAL)
Lightly toss the beef with flour.
In a Dutch oven, heat the oil and brown the beef on all sides, over medium-high heat. Stir in the remaining ingredients (except the mushrooms, if using) and simmer, stirring occasionally 1-½ hours or until beef is tender. (Add the mushrooms during the last 10-15 of cooking time).
Serve over hot cooked noodles if desired.
