Apple Pork Chops
(Prep Time: 30 minutes. Serves 2)
2 center-cut loin pork chops, about ½-inch thick
1 cup apples, peeled, cored and sliced
2 teaspoons margarine (soybean- and safflower-oil based)
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ teaspoon black pepper
Melt margarine in a nonstick skillet. Sauté the apples until tender (do not overcook, or they will get mushy). Sprinkle with cinnamon, and remove from skillet. Cook the chops in the in the same skillet; sprinkle with salt and pepper. Serve the apple slices over the chops.
