Szechwan Pork Chops
(Prep Time: About 20 minutes. Serves 4)
1 lb. boneless pork sirloin chops, trimmed of fat
1 teaspoon vegetable oil
1 clove garlic, crushed
2 tablespoons (1 oz.) sherry
2 tablespoons soy sauce (low sodium)
1 tablespoon brown sugar
¼ teaspoon red pepper flakes
1 tablespoon water
1 teaspoon cornstarch
Heat the oil in large heavy skillet over medium-high heat; add garlic and chops to the pan and brown one side of chops, about 4-5 minutes; turn. In small bowl combine sherry, soy sauce, brown sugar and red pepper; pour over the chops. Cover and simmer gently for 12-15 minutes. Combine water and cornstarch; add to pan and cook until thickened.
