Quick Cassoulet
Please be advised, use "no salt added" products whenever possible - you'll see why.
(Prep Time: About 40 minutes. Serves 4-6)
1 lb. smoked pork sausage or kielbasa (turkey kielbasa is good, but higher
in sodium)
1 envelope (1 oz.) dry onion soup mix
1 can (10¾ oz) tomato soup (use low sodium, if you can find it)
2 cups water
1 cup baby carrots (or canned, no salt added)
1 lb. potatoes, peeled and cubed
1 bay leaf
¼ teaspoon black pepper
1 (15¼ oz) can corn (no salt added), drained
In a large pot, combine onion soup mix, water and tomato soup. Mix well. Add potatoes, carrots, sausage and seasonings. Bring to a boil. Reduce heat, cook 25 minutes or until potatoes are done. Add the corn during the last few minutes of cooking. Discard bay leaf and serve.
