Sausage, Pepper & Onion Supper
This is great with rice or pasta, but I have served this both plain, as is, and over salad greens as a light supper, and never had a complaint.
(Prep Time: About 30 minutes. Serves 4)
12 oz. Morningstar Farms® Sausage Crumbles (vegetarian Italian sausage)
1 tablespoon olive oil
2 medium bell peppers (green, red or a mix, seeded and cut into strips)
1 large onion, peeled and sliced
2 large cloves garlic, minced
¼ cup water
¼ cup dry white wine (OPTIONAL)
¾ teaspoon dried thyme
Heat the oil in a large nonstick skillet. Sauté the peppers, onion and garlic, until vegetables are crisp-tender, about 8-10 minutes. Add the sausage, water, wine (if desired), and thyme; cover and simmer another 10-15 minutes or until vegetables are tender and the meal is heated through.
