Pasta & Bacon Skillet Supper
As is, this cannot be considered a low fat dish, since 33% of the calories are from fat. Use reduced fat Parmesan to bring the fat calories below 30%, but watch the sodium.
(Prep Time: About 25-30 minutes. Serves 6)
8 oz. rigatoni (3 cups), cooked and drained
8 slices bacon (I use Morningstar Farms® Breakfast Strips), cut in 1" pieces
2 cups broccoli florets
½ teaspoon garlic, minced
8 oz. Mozzarella cheese, shredded (about 2 cups, part skim)
¼ cup Parmesan cheese, grated
1/8 teaspoon red pepper flakes
¼ cup fresh parsley
In 10-inch skillet, cook bacon over medium-high heat, until bacon is crisp (6 to 8 minutes). Reduce heat to medium. Add broccoli and garlic. Cook, stirring occasionally, until broccoli is crisply tender (4 to 5 minutes).
Add cooked rigatoni, Mozzarella, Parmesan, and red pepper flakes. Continue cooking, stirring occasionally, until cheese is melted (3 to 5 minutes). Sprinkle with parsley and serve.
