New England Clam Chowder
This isn't the lowest-fat version of this recipe, but it's tasty, and only takes about 30 minutes to prepare. Remember to add the clams at the last minute, otherwise, they will toughen. This version has about 360 calories per serving and about 19 grams of fat.
(Serves 4)
4 slices bacon (turkey bacon is OK, use soy-based if available)
½ cup onion, finely chopped
4 medium potatoes, peeled and diced
1 tablespoon all-purpose flour
2 cans (6-oz. EACH) minced clams with liquid
1 cup bottled clam juice
1 cup half & half
salt and pepper to taste
½ cup whipping cream (OPTIONAL)
2 tablespoons parsley, finely chopped
In a large, heavy saucepan, sauté the bacon until crisp. Remove the bacon and drain on paper towels, then crumble.
In the same pan, sauté the onions and potatoes for a few minutes; sprinkle with flour. Add the clam juice from both cans and the bottle, stirring to combine. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the potatoes are tender, about 15 minutes.
Add the half & half and season to taste with salt and pepper. Add the minced clams and whipping cream (if using). Heat until simmering, but do not boil. Sprinkle with bacon and parsley and serve.
