Stir-Fry Stew
Until they can produce a smoked sausage product limited in fat and sodium, this will remain, to me, an unhealthy dish (but it still tastes good!).
(Serves 4)
1 lb. smoked sausage, sliced (use turkey sausage to cut down on fat)
1 (16-oz.) bag frozen vegetable combination (broccoli, carrots, cauliflower)
1 (14-oz.) can stewed tomatoes, no salt added
1 (16-oz.) can black beans, drained, no salt added
1/8 teaspoon cayenne pepper
½ teaspoon garlic powder (more or less to taste)
1 medium tomato, sliced
In a large skillet, add the vegetables, stewed tomatoes, garlic and cayenne. Bring these to a boil, then reduce the heat. Add the sausage and cook for about 5 minutes. Add the black beans and cook for another 5 minutes or until heated through. Garnish with fresh tomato slices.
