Deli Soup
If you love Rueben sandwiches, you should enjoy this soup. It's rather high in fat (61% fat calories) and cholesterol. Decrease the amount of cheese to reduce the cholesterol.
(Serves 8)
½ yellow onion, coarsely chopped
½ cup celery, chopped
3 tablespoons margarine (reduced fat, no salt added)
¼ cup all-purpose flour
3 cups water
4 teaspoons beef bouillon granules (or 4 cubes, use low sodium if possible)
½ lb. corned beef, shredded (fresh braised or canned is OK)
1 cup sauerkraut, well drained
3 cups light cream (or half & half)
3 cups Swiss cheese, shredded (reduced fat)
6 - 8 slices rye or pumpernickel bead, toasted and cut into triangles
In a large saucepan, sauté onion and celery in butter until tender; stir in flour until smooth. Gradually stir in water and bouillon and bring to a boil. Reduce heat; simmer uncovered for 5 minutes. Add corned beef, sauerkraut, cream (or half & half) and 1 cup of the cheese. Cook for 30 minutes, or until slightly thickened, stirring frequently. Ladle into 8 ovenproof small bowls. Top each with a slice of bread and put ¼ cup of the cheese on top of the bread. Place in oven under broiler until the cheese melts and browns ever so lightly.
