Dressed Spinach
To me, there is nothing worse than a side of plain cooked spinach. It's bland and has little texture. Here's a way to dress it up a little....and the kids may enjoy it too (my youngest nieces sure did!)
(Serves 4)
1 (10-oz.) package frozen chopped spinach
1 (8-oz.) can sliced water chestnuts, drained
1 (4-oz.) can mushrooms, drained
1 medium clove garlic, minced
1 medium tomato, seeded and chopped
1 tablespoon onion, minced
2 tablespoons plain nonfat yogurt (optional garnish)
Cook the spinach according to package directions and drain. Stir in the remaining ingredients except for the yogurt. Cook this over low heat, stirring occasionally, until heated through, then drain. Serve with a dollop of yogurt, if desired.
