Emergency Substitutions
1 cup sifted cake flour
1 cup minus 2 tablespoons all-purpose flour (7/8 cup)
1 cup self-rising flour
1 cup all-purpose flour, 1/5 teaspoon salt and 1 teaspoon baking powder
1 cup powdered sugar
1 cup granulated sugar plus 1 teaspoon cornstarch. Whirl in blender or processor until powdered.
1 cup buttermilk
1 tablespoon lemon juice or vinegar plus 1 cup milk. Let stand 5 minutes after combining.
1 cup thin cream (20% fat)
7/8 cup milk plus 3 tablespoons fat, or use half & half
1 cup heavy cream (40% fat)
¾ cup milk plus 1/3 cup fat
¾ cup cracker crumbs
1 cup bread crumbs
1 ounce (1 square) chocolate
3 or 4 tablespoons cocoa plus 1 tablespoon butter or margarine
1 tablespoon fresh herbs
1 teaspoon dried herbs
1 small fresh onion, chopped
1 tablespoon dry minced onion, rehydrated
1 teaspoon dry mustard
1 tablespoon prepared mustard
1 cup tomato juice
½ cup tomato sauce plus ½ cup water
1 cup prepared catsup
1 cup tomato sauce plus ½ cup sugar and 2 tablespoons vinegar (for use in cooking)
½ cup bottled plum sauce
½ cup plum jam, ¼ teaspoon red pepper and ¼ teaspoon dried ginger
