Pasta Bake
(Serves 8)
¼ lb. hot Italian turkey sausage, casings removed
2 medium onions, diced
2 red peppers, seeded and diced
½ lb. mushrooms, sliced
1 lb. orecchiette ("little ears") pasta, cooked
1 cup nonfat ricotta cheese
1 (26-oz.) jar spaghetti sauce (low sodium, if possible)
¼ lb. skim-milk mozzarella cheese, diced
Preheat oven to 400° F.
Grease a 3-quart shallow baking dish. Crumble the sausage into a large skillet. Add the onions, peppers and mushrooms, and sauté over medium-high heat for about 12 minutes or until the vegetables are tender. Add the pasta, ricotta and sauce to the sausage and mix well. Place this in the baking dish, top with the mozzarella, and bake for about 30 minutes or until bubbly. Let stand for about 5 minutes before serving.
