Pork with Peanut Sauce
(Serves 4, approximately 370 calories per serving)

1 lb. pork tenderloin
1 package (3-oz.) oriental or pork flavored ramen noodles
2 teaspoons oil
½ teaspoon red pepper flakes (or more to taste)
½ teaspoon ground ginger (or 1 teaspoon fresh ginger, shredded)
¼ cup peanut butter, no sodium
2 tablespoons soy sauce
2 cups fresh spinach, washed, drained and torn
¼ cup sliced green onions

Cut the tenderloin into ¼-inch slices, trimming any visible fat. Cut each slice in half.

Cook the noodles according to package directions, but use only half of the seasoning packet. Drain the noodles and keep them warm. Reserve the cooking water.

In a large skillet, heat the oil. Add the pork, red pepper flakes and the ginger. Cook, stirring, until pork is done, about 5 minutes. Remove the pork and keep it warm. Discard the cooking oil.

Blend the peanut butter, ½ cup of the reserved cooking water from the noodles, and the soy sauce; heat, stirring, until hot, adding more of the cooking water if needed. Toss the cooked pork, noodles, spinach and green onions with the peanut sauce.
