Braised Celery & Mushrooms
This is a somewhat unusual side dish, but it's very good, and quick to prepare.
(4 servings)

2 cups celery, sliced diagonally
1 (4-oz.) can mushroom pieces, drained
¼ cup onion, chopped
1 cup broth, beef (use low fat, low sodium)
½ teaspoon Worcestershire sauce

Place celery in a large skillet, then scatter the mushrooms and onion over top.  In a separate bowl, combine the broth (or dissolved bullion) with the Worcestershire sauce. Pour the broth over the vegetables, and bring to a boil. Cover the vegetables, reduce the heat and simmer for about 10 minutes, or until the vegetables are crisp-tender.
