Monterey Chicken
(Serves 2)
2 boneless, skinless chicken breast halves
¼ teaspoon black pepper
nonstick cooking spray
4 teaspoons barbecue sauce
4 strips meatless bacon, cooked and crumbled
¼ cup Cheddar or Colby cheese (reduced fat), shredded
¼ cup Monterey Jack cheese, shredded
2 tablespoons tomatoes, seeded and diced
2 teaspoons chives
Pound the chicken breasts thin between two sheets of waxed paper, and season them with pepper.
In a nonstick skillet prepared with cooking spray, cook the chicken breasts until done. Transfer the chicken to an oven safe platter, and top with barbecue sauce, bacon and cheeses. Broil to melt the cheese. To serve, sprinkle with a small amount of tomatoes and chives.
