Pork with Onion Sauce
(Prep Time: About 30 minutes. Serves 4)

1 lb. boneless sirloin chops, trimmed of all fat
¼ teaspoon black pepper
1½ tablespoons all-purpose flour
1 tablespoon vegetable oil
¼ cup yellow onion, sliced thinly
¼ cup scallions, sliced
4 oz. lite beer
½ cup beef broth, defatted, low sodium
1 teaspoon cornstarch

Season pork chops with pepper; coat with flour.  Heat oil in a heavy skillet sprayed with nonstick cooking spray.  Add pork chops; fry for 3 minutes on each side.  Add onions; cook for another 5 minutes, turning chops once.  Pour in the beer and beef broth; cover and simmer 15 minutes. Remove pork chops to a preheated platter.  Season sauce to taste.
Blend cornstarch with a small amount of cold water.  Stir into the sauce and cook until thick and bubbly.  Pour over the pork chops and serve. (This is pretty good with sautéed cabbage.)
