Citrus Spinach Salad
(Prep Time: About 15 minutes. Serves 6)
10 oz. fresh spinach, washed, drained, and torn into bite-sized pieces
1 can (4 oz.) sliced mushrooms, no salt added, drained
1 can (5 oz.) sliced water chestnuts, drained and chopped
2 cups bite-sized orange sections
FOR THE ORANGE VINAIGRETTE DRESSING:
1 cup orange juice
1 cup wine vinegar
¾ cup sugar
1¼ teaspoon salt
¼ teaspoon black pepper
In a small bowl, beat together the juice, vinegar, sugar, salt and pepper. (Yields 2¾ cups dressing)
Coarsely tear the spinach into a large salad bowl. Add the drained mushrooms, water chestnuts and oranges. Toss with the Orange Vinaigrette dressing and serve.
