Chicken & Swiss Casserole
(Serves 6)
1 lb. boneless, skinless chicken breast halves
6 oz. Swiss cheese (reduced fat)
1 cup skim milk (1% milk fat)
1 can (10¾ oz) Healthy Request® cream of chicken soup
1½ cups plain croutons
¼ cup margarine (no salt added), melted
Preheat the oven to 325° F.
Prepare baking dish with nonstick cooking spray, and arrange the chicken in a single layer in it. Put a slice of Swiss cheese on each chicken piece.
In a small bowl, mix the soup and milk, then pour it over the chicken.
In another bowl, combine the croutons and melted margarine. Spread the buttered croutons over the casserole. Bake, covered, for 50 minutes; uncover, bake 10 minutes more.
