Chicken in Dijon-Cider Sauce

(Serves 4-6)

1 3-lb. frying hen, cut into serving pieces (or, buy a package of precut chicken
            pieces, legs, thighs, etc.)
1-2 tablespoons butter or oil
1 large onion, sliced
½ teaspoon salt
½ teaspoon black pepper
2/3 cup apple cider
1 tablespoon Dijon mustard
½ teaspoon dried thyme
2/3 cup light cream

Melt the butter or heat the oil in deep skillet. Add chicken and brown on all sides. Add onion, salt, pepper and cider. Mix mustard, thyme, and cream together; stir into chicken. Simmer chicken 30-35 minutes or until the juices run clear when pierced with a fork.
