Chicken & Noodles
This is another fattening dish....
(Prep time: 30 minutes. Serves: 4)
1 (8 oz.) bag egg noodles
4 boneless, skinless chicken breast halves, cubed
1½ cups fresh mushrooms, sliced thick
¼ cup green onions, sliced
2 tablespoons olive oil
1 (10¾ oz.) can cream of chicken soup
1 soup can milk (1%)
¼ teaspoon salt (OPTIONAL)
¼ teaspoon black pepper
½ teaspoon dried rosemary, crushed
Cook the noodles according to package directions.
In a large skillet, heat the oil and brown the chicken. Remove the chicken and drain the oil from the skillet, then add the soup. Stir in milk, salt, pepper and rosemary. Bring to a boil, stirring constantly. Add the chicken, mushrooms and onions, and simmer for 10 minutes. Drain the noodles well and place in a serving bowl. Pour the chicken mixture over the noodles and serve.
