Chow-Chow
Don't ask me how this relish got its name.... but it's very tasty!
(Yields about 4 pints)
1 quart chopped cabbage (1 small head)
3 cups chopped cauliflower (1 medium head)
2 cups chopped green tomatoes (4 medium)
2 cups chopped yellow onion (2 medium)
2 cups chopped sweet green peppers (4 small)
1 cup chopped sweet red pepper (2 small)
3 tablespoons salt
1½ cups sugar
2 teaspoons celery seed
2 teaspoons dry mustard
1 teaspoon mustard seed
1 teaspoon turmeric
½ teaspoon ginger
2½ cups vinegar
Combine the chopped vegetables and sprinkle with salt. Let stand for 4 to 6 hours in a cool place. Drain well.
Combine the vinegar, sugar and spices in a large sauce pot, and simmer for 10 minutes. Add the vegetables and simmer for another 10 minutes, then bring them to boil. Pack the vegetables into hot jars, leaving ¼-inch head space. Adjust caps and process for 10 minutes in a boiling water bath.
